But in Los Angeles, hotel restaurants need to serve more than eggs Benedict in the morning to be relevant. Hotel chefs have the opportunity to highlight the unique cooking that's endemic to LA, with farm fresh produce and polished techniques. In addition, with the Ace opening in Downtown and The Line heating up Koreatown, there are two new standout restaurants that would do well in any location, not just in a hotel.
